食譜: 芋頭香鴨煲 (Grilled duck with taro hot pot)


昨日好大風呀,

有60-70km呀, 我屋企周圍都好空曠呀, 所以特別食風呀, 朝早等巴士已經好難行, 放工就見鄰居啲雪縫吹到歪晒呀, 好誇張呀

今日算好啲,

但就突然好凍, 真係話變就變, 一唔小心, 就好容易被佢整病呀


春天就嚟啦, 天氣開始暖啦, 所以哩排我會出晒啲煲仔菜先, 其它餸, 就遲啲先出啦, 無理由要大家夏天食煲仔菜嘛,

哩個餸, 真係超好味, 我加拿大哩邊無得買燒鵝, 只有燒鴨代替, 但味道差唔多啦, 所以整出嚟個煲嘅味道真係好正

買燒鵝時最好叫呀哥斬件比你, 返家就用少少時間起骨先, 點解呢? 因為要用啲骨做個汁底先, 將啲骨煲15分鐘或更耐,

芋頭記得帶手套先同佢去皮,

否則手痕唔會搵我算帳呀, 之後煎煎佢等佢唔會炆炆吓溶晒, 但你唔想的話都可以就咁炆, 無問題的


最後5分鐘先加鴨/鵝肉去炆, 目的只係加加熱, 唔需要炆太耐, 否則會開始鞋啦, 個汁唔需要再加咩蠔油啦, 加少少老抽加啲色, 生抽加啲鹹味就已經好味到暈呀

Prep 準備: 10 minutes |  Cook烹調: 40 minutes |  For 份量: 4 people 


材料 Ingredients

1- 燒鵝/鴨一隻, 起骨, 切件 (1 lbs chinese grilled duck, cut into pieces, bone removed)

2- 芋頭1磅半左右, 去皮切件 ( 1 lbs and half of taro, peeled, cut into pieces)

3- 青蔥3條, 去尾, 切絲 (3 green onions, stem off, sliced)

汁料 Sauce
份量只供參考 (just for reference only)

1- 老抽1茶匙 (1 tsp of dark soya sauce)

2- 生抽1茶匙 (1 tsp of soya sauce)
 
做法 Steps

1- 先將鴨/鵝骨用2約2杯水(400ml) 快火煲15分鐘 (圖1), 同時間, 快火落油(約3湯匙)起鑊, 將芋頭炒至兩面微黃(圖1), 盛起備用

2- 鴨/鵝湯去掉所有骨頭, 落芋頭, 再加水至剛蓋過芋頭, 中火蓋頂炆15分鐘或至腍身(圖3), 再加入汁料搞勻試好味, 舖上鴨/鵝肉蓋頂炆5分鐘, 熄火加入蔥絲蓋頂焗2分鐘即成

1- Boil the duck bone with 2 cup of water (400ml) over high heat for 15 minutes (fig.1).  In the same time, heat the pan with 3 tbsp of oil over high heat.  Stir fry the taro until lightly brown (fig.2).  Put it aside.

2- Remove the bone from the sauce.  Pour in the taro and add water to cover it.  Simmer it over medium heat for 15 minutes or until soft.  Stir in the sauce mix and adjust the taste accordingly.  Top the duck on top of the taro and simmer it for 5 minutes with closed lid.  Turn off the heat and top with the green onion.  Close the lid and let it simmer for additional 2 minutes.  Serve it in hot.


貼士 Tips
1- 汁料味道要到最後自己調教, 切忌一開始就將汁料整得太濃味

    通少、有無睇電視既「Semi Homemade」(Sandra Lee)、哩個餸令我想起 Semi Homemade、因為隻鴨係買返黎自己起骨、加上自己既簡単煮法完成一個好食既餸菜。我吾係話Semi Homemade 吾好、其實好好、特別係依家我地哩d日忙夜忙既人(仲要寫Blog)、係好好既Idea、佢好似你咁好多人睇架。

  13. 我昨晚又整左個你教的南乳, 不過我用左腩肉同支竹, 但汁料就用番你教的 , 又係好正呀 , 另外我試左個火腿蒸豆腐 , 落左麻油, 生抽同埋胡椒粉來蒸, lee個餸又平又簡單, 都係改自你的魚肉豆腐呢 , 謝謝你呀 ~
    鴨鴨lee個都超easy, 等我又試下先 ~
