食譜: 通少枝竹火腩煲 (Grilled pork and bean curd stick hot pot)

上個星期真係身心疲累呀, 星期日同太太過了一個休閒的一日, 早上執下屋, 下午一齊去做massage, 真係好舒服, 好relax呀, 搞到我今日連工都唔想返

唔知做咩事, 不過最近唔想返工, 心情都唔多靚, 星期六朋友嚟我屋企食飯, 我真係大失水準, 煮得非常差,

今日再嚟一個超簡單嘅通少煲仔菜, 成個煲最麻煩只係處理個枝竹呀


之前試過一次唔炸啦, 就咁炆, 結果就當然係爛晒, 枝竹變枝碎, 非常樣衰, 今次煎吓佢, 炆時的確唔會爛, 不過亦有啲唔腍喎,

所以我會建議大家煎或炸完後, 浸一浸熱水先, 甚至煲佢15分鐘先都無問題, 之後先炆就應該會好好多, 如果大家有咩更好提議,

tonytsang and kareny recipy

材料 Ingredients

1- 燒肉一磅左右, 切件 (1 lbs chinese grilled pork, cut into pieces)

2- 芋絲1包, 非必要 ( 1 bag of yam bundles, optional)

3- 青蔥3條, 去尾, 切絲 (3 green onions, stem off, sliced)

4- 蒜蓉1湯匙 ( 1 tbsp of minced garlic)

5- 枝竹8條左右, 切半 (8 bean curd stick, cut into half)

汁料 Sauce
份量只供參考 (just for reference only)

1- 老抽1茶匙 (1 tsp of dark soya sauce)

2- 生抽1茶匙 (1 tsp of soya sauce)

3- 蠔抽1茶匙 (1 tsp of oyster sauce)
 
做法 Steps

1- 快火落油(約5湯匙)起鑊, 轉中火, 將枝竹兩面煎至金黃, 浸於熱水10分鐘, 再隔水備用

2- 快火落油(約1湯匙)起鑊, 將蒜頭和青蔥爆香(圖1), 再加入燒肉, 芋絲和枝竹, 再加水蓋過材料一半左右(圖2), 中火蓋頂炆30分鐘或至枝竹腍身, 加入汁料調好味即成

1- Heat the pan with 5 tbsp of oil over high heat.  Fry the bean curd sticks until both sides turn brown.  Soak it in hot water for 10 minutes.  Then drain it well and put it aside.

2- Heat the pan with 1 tbsp of oil over high heat.  Stir fry the garlic and green onion until fragrant (fig.1).  Stir in the pork, yam bundle and bean curd sticks.  Add water to cover 1/2 of the ingredients (fig.2).  Simmer it over medium heat for 30 minutes or until the bean curd sticks are soft.  Stir in the sauce mix and adjust the taste accordingly.  Serve it in hot.


貼士 Tips
1- 買現成炸好的枝竹會更慳時間, 自己炸的話, 浸熱水可以去油及容易炆至軟身

1- You can buy the fried bean curd sticks in the market to save some time.  Soak into hot water to help it remove the grease and make it soft easier
