金菇好多朋友都話,

粉絲浸軟過, 絕對唔需要煮太耐, 我仲離譜呀, 唔浸, 洗一洗就咁煮添呀, 因為粉絲煮得太耐就會好腍好難食啦,

唔怕辣仲可以加少少辣椒油,

1- 無骨雞柳1磅左右, 切件 (1 lbs boneless chicken fillet, cut into pieces)

2- 粉絲約80克, 浸軟, 剪半 ( 80g of vermicelli, soaked, cut into half)

3- 金菇200克, 去尾 (200g of Enoki mushroom, stemmed off)

4- 中型洋蔥1個, 去皮切絲 (1 medium onion, peeled, sliced)

5- 黃紅各椒1個, 切絲 (Yellow/Red pepper each, sliced)
份量只供參考 (just for reference only)

1- 豉油雞汁1/2 杯 (1/3 cup of chicken marinade)

2- 水1杯 (1 cup of water)

1- 先將雞肉用基本野醃15分鐘, 快火落油(約1湯匙)起鑊, 將雞肉炒熟盛起隔油備用 (圖1)

2- 快火落油(約1湯匙)起鑊, 落洋蔥和約1/2茶匙炒至軟身, 再加紅黃椒炒勻(圖2)盛起, 煲或鑊內加入粉絲 (圖3), 再舖上洋蔥和紅黃椒, 再舖上金菇, 再舖上雞肉(圖4), 再加入汁了大火煲滾, 調好味, 蓋頂焗2分鐘即成

1- Marinade the chicken with basic seasoning for 15 minutes. Heat the pan with 1 tbsp of oil over high heat. Fry the chicken until both side is golden and well done. Put it aside and drain it well (fig.1)

2- Heat the pan with 1 tbsp cup of oil over high heat. Stir in the onion with 1/2 tsp of salt until soft. Stir in the peppers and mix it well (fig.2). Dish it up and put it aside. Put the vermicelli into the pot or pan (fig.3). Top it up onions and peppers. Top it up with Enoki mushroom. Top it up with the chicken (fig.4). Pour in the sauce mix and heat through over high heat. Adjust the taste and turn off the heat. Simmer it for 2 minutes. Serve it in hot.
1- 汁料偏甜, 如果不好甜的, 請加點生抽及蠔油調好味

1- The sauce will be sweet. If you don't like sweet, you can add the soya sauce and oyster sauce to balance it out
