食譜: 紅綠碎肉 (Minced pork and celery in tomato sauce)

上個星期轉左日光時間, 即係話, 我住哩邊現在慢香港13個小時啦, 例如你地晚上10點, 即係我哩邊9點啦, 要到春天四月先會加快返1個小時啦, 亦因為咁, 我現在出食譜會早少少啦

雖然瞓多左1個小時, 但我仍然覺得唔夠瞓, 上個星期只係在家休息, 執吓野, 清潔吓屋企, 睇吓電視劇, 最近迷上睇"原來愛上賊", 哈哈哈


今日出哩個餸, 味道方面實在有保證啦, 大家都知我對蕃茄有幾狂啦, 所以通常煮茄汁,

好多blog友都話我知, 小朋友唔肯吃西芹, 我唔知有無講過, 我覺得個有2個辦法,

一係就切細粒啲, 切到好似蒜泥咁, 小朋友應該無咁容易發現, 再加埋茄汁, 酸嘅味道又會蓋過西芹味道


再唔得, 就將西芹, 紅蘿蔔, 蕃茄同水用攪拌器打成汁, 同一個道理, 茄汁煮完出嚟西芹味道唔會太大,

碎豬肉你可以用半肥瘦嘅枚頭豬肉自己啄成, 不過我太懶, 亦無咁嘅時間, 所以都係買現成碎肉, 買現成的話, 就一定要白鑊炒熟隔油,

材料 Ingredients

1- 碎豬肉1磅左右 (1 lbs of minced pork)

2- 中型洋蔥1個, 去衣切粒 (1 medium onion, diced)

3- 蒜蓉1湯匙 (1 tbsp minced garlic)

4- 西芹1杯 (1 cup of diced celery)

5- 蕃茄粒1杯 (1 cup of diced tomato, diced)

6- 紅蘿蔔粒1/2杯 (1/2 cup of diced red carrot)



汁料 Sauce mix
份量自供參考 (just for reference only)

1- 茄汁3湯匙 (4 tbsp of ketchup)

 水2/3杯 (2/3 cup of water)

3- 糖1湯匙 (1 tbsp of sugar)

4- 鹽1/3茶匙 (1/3 tsp of salt)



做法 Steps

1- 先將紅蘿蔔出水約3分鐘, 再加西芹出水約1分鐘備用, 豬肉用基本野醃20分鐘備用, 之後白鑊將豬肉炒熟, 隔油備用(圖1)

快火落油(約1湯匙)起鑊, 先爆香蒜蓉, 再加入洋蔥和1/2茶匙鹽炒軟, 加入紅蘿蔔, 西芹炒香兜勻(圖2), 加入豬肉和蕃茄兜勻(圖3), 先加入水煮滾, 蓋頂焗2-3分鐘, 再加其他汁料兜(圖4), 上碟即成

1-  Blanch the red carrots for about 3 minutes.  Add in the celery for additional 1 minute.  Drain them well.  Marinade the pork with basic seasoning for 20 minutes.  Then, Heat the pan without oil and stir fry the pork until fully cooked.  Drain it well and put it aside (fig.1).

2- Heat the pan with some oil over high heat (at least 1 tbsp of oil).  Stir fry the garlic, until fragrant.  Stir fry the onion with 1 tsp of salt until soft.  Stir in red carrots and celery.  Mix them well (fig.2).  Stir in the pork, tomato and water (fig.3).  Mix it well and simmer it for 2-3 minutes with closed lid.  Stir in the rest of sauce mix and mix it well (fig.4).  Dish it up and serve it in hot.

汁料口味要自己調整, 要甜一點就加糖多些, 要酸一點就加鹽多些

1- Adjust the taste the sauce mix before cook.  Add more sugar if it is too sour or add some salt if it is too sweet
