今日係公司發現部靚咖啡機有個功能好容易就發起啲奶做latte, 真係開心死我啦, 我怕我日日都要整番杯先得啦, 哈哈, 好過癮呀
雪菜筍絲炒肉絲哩個餸真係非常之好味道呀, 平時雪菜肉絲就食得多, 原來加啲筍絲去煮, 個味道可以咁夾呀
哩個餸味道可以話完全來自醃料, 所以只要豬肉醃得好, 個汁基本上唔需要點樣調味都可以香濃可口呀
醃肉基本功, 大家唔知的話, 記得要去睇"技巧分享-Share Experience" 哩個網誌分類呀, 入面有講點樣醃肉先為知好呀
雪菜可以買新鮮切絲, 懶嘅又或者無得買新鮮嘅, 就可以用罐頭, 但罐頭雪菜會有啲罐頭味, 炒時要加少少糖, 就可以去左個啲味啦
筍用新鮮的話, 就要用竹筍, 切絲後要記得飛水先好呀, 用罐頭當然無咁好味, 不過就方便好多啦
簡簡單單, 材料又唔複雜, 味道天然又好味, 大家真係要試吓呀

1- 枚頭豬肉1磅左右, 切絲 (1 lbs of tenderloin pork, sliced)

3- 罐頭筍片1罐, 切絲 (1 cane of bamboo shoot, sliced)
汁料 Sauce mix

1- 紹興酒2湯匙 (2 tbsp of shaoxing wine)

2- 水2/3杯 (2/3 cup of water)

3- 糖1/3茶匙 (1/3 tsp of sugar)

做法 Steps

1- 先將豬肉用基本野醃20分鐘備用, 之後快火落油(約1湯匙)起鑊, 將豬肉炒熟, 盛起備用(圖1)

2- 快火落油(約1湯匙)起鑊, 先爆香雪菜, 再加糖略炒, 再加入筍絲, 豬肉, 和酒快手兜勻炒香(圖3), 再加入水煮滾, 蓋頂焗2-3分鐘, 加生粉水埋獻, 上碟即成

1- Marinade the pork with basic seasoning for 20 minutes. Then, Heat the pan with 1 tbsp of oil and stir fry the pork until fully cooked. Dish it up and put it aside (fig.1).

2- Heat the pan with some oil over high heat (at least 1 tbsp of oil). Stir fry the cabbage with the sugar, until fragrant. Stir in the pork and bamboo shoot (fig.2). Mix them well. Stir in wine and stir-fry it quickly (fig.3). Stir in the water and simmer it for 2-3 minutes with closed lid. Stir in the corn starch mixture to thicken the sauce. Dish it up and serve it in hot.
