食譜: 蒜茸豆豉炒粒粒 (Assorted vegetable in black bean sauce)

今日好忙呀, 到現在先叫得閒少少可以打吓blog咋, yahoo好似仲係short short地, 大家出blog記得copy左先呀

美國大選obama順利勝出, 希望佢唔好學呀薯仔咁, 掛著打仗, 快啲搞好啲經濟啦, 不過我覺得佢做唔到啲咩, 始終經濟問題, 唔係一個人可以搞得掂呀


今日無咩時間出blog, 啦啦臨講比大家知哩個餸點煮先

粒粒最麻煩係將材料切粒, 不過切完炒起上嚟就唔會好難, 快快手兜勻就得


蒜蓉豆豉記得先爆香,

聞到香味先開始炒, 炒時想惹味啲可以加酒, 1-2殼就已經夠晒


一落左磨菇就唔好再炒太耐啦,

1- 芋絲12粒, 去水 (12 yam bundle, drained)

2- 蒜茸1湯匙 (1 tbsp of minced garlic)

3- 中洋蔥1個, 去衣, 切粒 (1 medium onion, diced)

4- 西芹粒1/2杯 (1/2 cup of diced celery)

5- 磨菇粒1杯 (1 cup of diced white mushroom)

6- 辣椒粒菜2湯匙 (2 tbsp of diced red pepper)

7- 青蔥2條, 切段 (2 green onion, cut into section)

8- 馬蹄粒1/2杯 (1/2 cup of diced water chestnut)




汁料 Sauce mix
份量自供參考 (just for reference only)

1- 李x牌蒜茸豆豉醬2湯匙 (2 tbsp black bean and garlic sauce)

 蠔油2茶匙 (2 tsp oyster sauce)

糖1茶匙 (1 tsp sugar)

4水1/4杯 (1/4 cup of water)

5生粉2茶匙+1湯匙水 (2 tsp corn starch + 1 tbsp of water)




做法 Steps

1- 快火落油(約1湯匙)起鑊, 先爆香辣椒, 蒜茸,青蔥和蒜茸豆豉醬 , 再加洋蔥和1茶匙鹽炒至軟身(圖1)

再加入西芹和馬蹄兜勻炒軟(圖2), 再加磨菇兜勻(圖3), 再加汁料煮滾, 加入芋絲蓋頂焗2-3分鐘, 加生粉水埋獻, 上碟即成

1-  Heat the pan with some oil over high heat (at least 1 tbsp of oil).  Stir-fry the red pepper, garlic, green onion and the black bean sauce until fragrant.  Stir in the onion with 1 tsp of salt until soft (fig.1).

2- Stir in the celery and water chestnut and mix it well until soft (fig.2).  Stir in the mushroom and mix it well (fig.3).  Stir in the sauce mix and yam bundle (fig.4) and simmer it for 2-3 minutes with closed lid.  Stir in the corn starch mixture to thicken the sauce.  Dish it up and serve it in hot.
