食譜: 茄皇金玉 (Egg tofu with enoki mushroom in tomato sauce)

唔好意思, 昨日唔多精神, 所以無出食譜呀, 哈哈


昨日係加拿大大選日子, 一如大眾所料,

最終都係小數政府, 而唔係一黨當政呀, 其實我覺得真係好多餘, 勞民傷財, 最後結果都係一樣呀


本來今日出個意粉呀, 不過我覺得,

但今日哩個餸都係用蕃茄, 而且仲有玉子豆腐, 非常之香口醒胃呀

玉子豆腐記得唔好成日一路煎一路反, 否則好易散晒呀, 至於其他野其實都好耐煮, 所以應該唔會有咩問題, 反而金菇要小心, 唔好煮太耐, 否則會太腍呀

1- 玉子豆腐2條 (2 roll of egg tofu)

2- 蒜蓉1湯匙 (1 tbsp chopped garlic)

3- 中型洋蔥1個, 去衣切件 (1 medium onion, cut into pieces)

4- 雜豆1杯 (1 cup of assorted vegetable)

5- 金菇200克, 去尾段 (200g of Enoki mushroom, stemmed off)

6- 蕃茄2個, 切件 (2 tomato, cut into pieces)

汁料 Sauce mix

份量自供參考 (just for reference only)

1- 茄汁3湯匙 (3 tbsp of ketchup)
tonytsang and kareny recipy
2- 茄膏2湯匙 (2 tbsp of tomato paste)

3- 鹽1茶匙 (1 tsp of salt)

4- 糖1茶匙 (1 tsp of sugar)

5- 水5湯匙 (5 tbsp of water)

做法 Steps

1- 玉子豆腐抹乾切件, 平均沾滿粟粉, 快火落油(1湯匙)起鑊, 轉中火將玉子豆腐煎至兩面金黃(圖1), 盛起放於碟中

快火落油(約1湯匙)起鑊, 爆香蒜茸, 加洋蔥和1茶匙鹽炒至軟身(圖2), 加蕃茄和雜豆炒香(圖3), 加入汁料和金菇(圖4)兜勻, 汁滾及金菇軟身即可熄火, 淋於豆腐上即成

1- Dry the tofu well and cut into pieces.  Coat the tofu evenly with corn starch.  Heat the pan with oil (1 tbsp) over high heat.  Reduce the heat to medium and fry the tofu until both sides turn brown (fig.1).  Dish it up.

2- Heat the pan with some oil over high heat (at least 1 tbsp of oil).  Stir fry the garlic until fragrant.  Stir in onion with 1 tsp of salt until soft (fig.1).  Stir in the assorted vegetable and tomato and mix well (fig.3).  Stir in sauce mix and mushroom, and mix it well (fig.4).  Once the sauce is boiled and the mushroom is soft, pout it over the tofu.  Serve it in hot.
