食譜: 三色皇子炒牛柳 (Stir fry beef with king oyster mushroom)

返工哩排都無咁忙啦, 因為project終於都趕完, 不過仲有好多training 要做, 最近一即都覺得好疲倦, 我真係好想請假休息吓

今日哩個餸, 我都係第一次用皇子菇, 我平時實唔買佢, 因為真係好貴吓, 難得佢減價, 就買嚟試吓啦

皇子菇真係一隻好菇, 煎佢時唔出水, 仲好有菇味添呀, 我用牛油煎佢令佢更加香口, 好多時煮菇類嘅食材, 最後一定會同其他材料撈埋一碟, 但因為皇子菇比較香同獨特, 我無咁做, 我將佢上碟先, 最後就放牛肉係上面, 咁就唔影響佢本身個味道啦


牛肉記得絕對唔好落鹽去醃, 都真係講左好多次, 仲未知點解的話, 或者仲係唔記得的話, ok, 你落啦, 等你知道咩叫石頭牛肉,

牛肉如果唔係太肥, 記得唔好煮咁熟, 一樣會好韌, 7成熟, 入面仲係微微粉紅就得啦

三色椒唔一定要落, 改用青椒, 粟米仔都得, 無咩所謂, 佢主要作用都係整靚啲, 同埋可以令人飽肚啲啦

材料 Ingredients

1- 牛肉1磅左右, 切粒 (1 lbs of beef, diced)

2- 中型洋蔥1個, 去皮切粒 ( 1 medium onion, peeled, diced)

3- 皇子菇500克, 切片 (500g of King Oyster Mushroom)

4- 蒜蓉1湯匙 ( 3 tbsp of minced garlic)

5- 紅, 黃, 橙椒各半個, 切件 (1/2 Red,yellow,organge pepper, cut into pieces) 
醃料 Seasoning
份量只供參考 (just for reference only)

1- 糖1/2茶匙 (1/2 tsp of sugar)

2- 蠔油2湯匙 ( 2 tbsp of oyster sauce)

3- 水2湯匙 (2 tbsp of water)

做法 Steps

1- 牛肉用基本野(除了鹽)醃15分鐘, 快火落油(約1湯匙)起鑊, 先將牛肉煎至四面金黃, 約5成熟, 盛起備用

2- 中火落1湯匙牛油起鑊, 將皇子菇煎至兩面微黃, 上碟起備用(圖1), 快火落油(約1湯匙)起鑊, 先爆香蒜蓉, 再落洋蔥和約1/3茶匙炒至軟身, 再加入三色椒略炒, 再加牛肉和汁料兜勻(圖2), 上碟舖在皇子菇上即成

1- Marinade the beef with the seasoning (except the salt) for 15 minutes.  Heat the pan with 1 tbsp of oil over high heat.  Stir-fry the beef until both side turn brown (around 50% done).  Put it aside.

2- Heat the pan with 1 tbsp of butter over medium heat.  Pan-fry the mushroom until both side turn brown.  Dish it up and put it aside (fig.1).  Heat the pan with 1 tbsp of oil over high heat.  Stir fry the garlic until fragrant and golden.  Stir in the onion with 1/3 tsp of salt until soft.  Stir in peppers and mix it well.  Stir in the beef and sauce mix, mix it well (fig.2).  Dish it up and top it over the mushroom.  Serve it hot.
