食譜: 雪菜蕃茄粉絲煲 (Tomato and pickled cabbage hot pot)

講真, 哩個餸唔需要用好多調味料, 只要你啲蕃茄夠靚, 個湯底做得好, 就自己非常好味, 我試過有次用8個蕃茄去整, 連魚露都可以唔需要落, 個湯底已經非常之鮮甜啦


之前用嚟做湯麵已經無得頂, 今次改做煲仔,

材料 Ingredients

1- 枚頭豬肉1磅左右, 切絲 (1 lbs of tenderloin pork, sliced)

2- 雪菜一小罐  (1 small cane of pickled cabbage)

3- 紅蕃茄4個, 切件 (4 beef tomato, cut into pieces )

4- 粉絲約80克, 浸軟, 剪半 ( 80g of vermicelli, soaked, cut into half)

5- 金菇約200克, 去尾( 200g of Enoki mushroom, stemmed off)



汁料 Sauce
份量只供參考 (just for reference only)

1- 魚露2湯匙 (1 tbsp of soya sauce)

2- 糖1/3茶匙 (1/3 tsp of sugar)



做法 Steps

1- 先將豬肉用基本野醃15分鐘, 快火落油(約1湯匙)起鑊, 將豬肉炒熟盛起備用 (圖1)

2- 快火落油(約1湯匙)起鑊, 先加入雪菜和1/2茶匙糖炒香, 再加入蕃茄和1/2茶匙糖和鹽炒至軟身(圖2), 加入豬肉和水至剛蓋過材料, 蓋頂煮10分鐘(圖3), 熄火, 混入金菇和粉絲及汁料調味(圖4), 蓋頂焗3分鐘
即成

1- Marinade the pork with basic seasoning for 15 minutes.  Heat the pan with 1 tbsp of oil over high heat.  Stir-fry the pork until done (fig.1).  Dish it up and put it aside.

2- Heat the pan with 1 tbsp of oil over high heat.  Stir-fry the cabbage with 1/2 tsp of salt until fragrant.  Stir in and stir fry the tomato with 1/2 tsp of sugar and salt until soft (fig.2).  Stir in the pork and add water to cover the ingredient.  Simmer it for 10 minutes with closed lid (fig.3).  Turn the heat off, stir in the mushroom, vermicelli, sauce mix and mix it well (fig.4).  Simmer it for 3 minutes with closed lid.  Serve it in hot.

1- 金菇和粉絲都是很容易煮熟, 不用下得太早以免影響口感
