食譜: 蜜梅京燒骨 (Spare ribs in special Plum sauce)

新年假期大家過的開心嘛, 有咩節目呀? 係唔係好忙去派(逗)利是呀? 我就知係同家人吃過飯, 無咩搞其他野啦, 哈哈

我哩邊當然無新年假喇, 基本上仲好忙呀, 返工有project要趕, 又要讀書準備考牌,

而排骨, 要整得熟, 好多人都會用中火炸, 咁做雖然香口, 快捷,

但未免用得太多油, 油煙又多, 又熱氣, 所以我改用先煎而後炆嘅方法


係香港嘅朋友用開煤氣爐的話, 記得改用中大火而唔好用大火去炆, 因為你o地火力比較強


哩個方法當然用多好多時間啦, 不過無咁熱氣, 油同煙都減少,

材料 Ingredients

1- 肉排1磅左右, 切長條 (1 lbs spare ribs, cut into long sections)

2- 熟芝麻1湯匙  (1 tbsp of fried sesame seeds)


醃料 Seasoning
份量只供參考 (just for reference only)

1- 柱侯醬2湯匙 (2 tbsp of Chu hou paste)

2- 磨豉醬2湯匙 (2 tbsp of crushed yellow bean paste)

3- 糖1/2茶匙 (1/2 tsp of sugar)

4- 生粉2湯匙 (2 tbsp of corn starch)

5- 油2茶匙 (2 tsp of oil)

6- 水3湯匙 (3 tbsp of water)
  

汁料 Sauce
份量只供參考 (just for reference only)

蘇梅醬3湯匙 (3 tbsp of Plum sauce)

2- 鎮江香醋1/2茶匙 (1/2 tsp of Chinkiang Vinegar)

3- 蜜糖1湯匙 (1 tbsp of honey)

4- 水1湯匙 (1 tbsp of water)

5- 生抽1湯匙 (1 tbsp of soya sauce)
 


做法 Steps

1- 先將排骨用醃料醃20分鐘備用, 汁料攪勻調好味道備用

2- 快火落油(約2湯匙)起鑊, 放入排骨炒至外面微焦(圖1), 加入1杯水, 蓋頂快火炆30分鐘(注意乾水), 倒去肉汁, 熄火加入汁料兜勻(圖2),  上碟灑上芝麻
即成

1- Marinade the spare ribs the seasoning for 20 minutes.  Mix the sauce mix and adjust the taste accordingly.  Put it aside

2- Heat the pan with 2 tbsp of oil over high heat.  Stir fry the ribs until brown (fig.1).  Add 1 cup of water and heat through.  Simmer it with closed lid over high heat for 30 minutes (be aware the water dried out) .  Drain the water and turn off the heat.  Stir in the sauce mix and mix it well (fig.3).  Dish it up and top with the sesame seed.  Serve it in hot.
