食譜: 黑椒肥牛煲 (Beef hot pot in Black pepper sauce)

非常唔好意思, 一即都無出食譜比大家, 大家都知我最近忙好多, 放工又唔想用電腦, 做完運動, 陪吓太太睇吓電視後都無晒時間, 好在今日無咁忙, 啦啦臨寫個食譜先啦

聽日又要係屋企上堂啦, 所以都唔知出唔出食譜, 無計啦, 而家真係忙好多呀


今日哩個煲正呀, 當然無煲仔就咁用碟上都得, 哩個煲冬天食先得, 因為黑椒都可以幾辣吓,

牛肉當然最好用肥牛啦, 我自己就改用牛柳, 牛味當然重好多,

記得牛肉用鹽去醃會韌, 所以醃時唔好多手落鹽呀


個汁我改良過, 同我之前出食黑椒汁好唔同, 多左好多醬料, 係呀, 我覺得至前個啲汁好鹹, 無咩甜味, 所以一改再改,

無咩所謂, 因為紅蘿蔔同洋蔥基本上都夠晒甜呀, 粉絲亦記得唔好煮太耐, 佢浸軟後其實好易就熟, 一熄火, 兜入去個汁就得, 到你開餐時已經熟啦

材料 Ingredients

1- 牛肉1磅左右, 切片 (1 lbs of beef, sliced)

2- 紅蘿蔔2條, 去皮, 切段  (2 red carrots, peeled, cut into section)

3- 粟米仔8條, 切半 (8 baby corns, cut into half )

4- 粉絲80克, 浸軟, 切半
 ( 80g of vermicelli, soaked, cut into half)

5- 中型洋蔥1個, 去衣, 切片 (1 medium onion, peeled, sliced)

6- 蒜蓉1湯匙  (1 tbsp of minced garlic)


汁料 Sauce
份量只供參考 (just for reference only)

1- 蠔油2湯匙 (2 tbsp of oyster sauce)

2- 老抽2湯匙 (2 tbsp of black soya)

3- 糖1/2茶匙 (1/2 tsp of sugar)

4- 生抽1湯匙 (1 tbsp of soya sauce)

5- 海鮮醬1茶匙 (1 tsp of hoisin sauce)

6- 雞粉1/3茶匙 (1/3 tsp of chicken powder)

7- 黑椒粉適量 (Some black pepper)

8- 水2杯 (2 cup of water)
  


做法 Steps

1- 先將牛肉用基本野(除了鹽及加黑椒粉)醃15分鐘備用, 快火落油(約1湯匙)起鑊, 炒至7成熟, 盛起備用

2- 快火落油(約1湯匙)起鑊, 先爆香蒜蓉, 再加入洋蔥和1/3茶匙鹽炒至軟身(圖1), 再加入紅蘿蔔和粟米仔連同老抽兜勻(圖2), 再加入其餘汁料至滾起, 蓋頂炆5分鐘, 熄火後, 加入粉絲兜勻上碟, 再加牛肉於面
即成

1- Marinade the beef with basic seasoning and black pepper (except salt) for 15 minutes.  Heat the pan with 1 tbsp of oil over high heat.  Stir fry it until 70% done.  Dish it up and put it aside

2- Heat the pan with 1 tbsp of oil over high heat.  Stir fry the garlic until fragrant.  Stir fry the onion with 1/3 tsp of salt until soft (fig.1).  Stir in the red carrot and baby corns along with the black soya.  Mix it well (fig.2).  Stir in the rest of the sauce mix and heat through.  Simmer it for 5 minutes.  Turn off the heat and stir in the vermicelli.  Dish it up and put the beef on the top.  Serve it in hot.
