食譜: 港式茄汁豬扒 (Pork chop in tomato sauce with HK style)

星期五啦, 又可以休息兩日啦, 星期六日應該可以好好休息一吓啦, 哩排都瞓得唔夠, 星期六要瞓夠本先得呀, 哈哈

我今次都用港式方法去處理個汁, 即係落老抽, 唔落喼汁,

洋蔥記得要落少少鹽佢先會軟身, 先會易熟, 煮完出嚟就會甜而唔係辣, 非常好味呀

材料 Ingredients

1- 無骨豬扒6塊, 拍鬆切件 (6 boneless pork chop, beaten, cut into pieces)

2- 中型洋蔥1個, 去衣切件 (1 medium onion, peeled, cut into pieces)

3- 蒜蓉2茶匙 (2 tsp chopped garlic)

4- 紅蔥頭1粒, 切粒 (1 shallots, peeled, diced)

5- 蕃茄(牛茄)3個, 切件 (3 beef tomato, cut into pieces)



汁料 Sauce
份量只供參考 (just for reference only)

1- 茄汁約3湯匙 (3 tbsp Ketchup)

2- 水1/2杯 (1/2 cup of water)

3- 糖1湯匙 (1 tbsp of sugar)

4- 老抽1湯匙 (1 tbsp of black soya)



做法 Steps

1- 先豬扒拍鬆切件, 用基本野醃15分鐘, 快火落油(約2湯匙)起鑊, 落豬扒煎至兩面金黃, 再用中火, 煮至全熟 (圖1), 盛起備用

2- 快火落油(約1湯匙)起鑊, 加入洋蔥和1茶匙鹽, 1湯匙老抽炒至軟身(圖2), 再加入蕃茄和1湯匙糖炒軟 (圖3), 加入汁料兜勻煮滾, 加入豬扒(圖4), 蓋頂焗2分鐘, 調味, 埋獻, 上碟即成

1- Beat the pork chop evenly.  Cut into pieces and marinade it with basic seasoning for 15 minutes.  Heat the pan with some oil over high heat (at least 2 tbsp of oil).  Brown both side of the pork chop.  Turn to medium heat and cook until it is full done (fig.1).  Put it aside.

2- Heat the pan with some oil over high heat (at least 1 tbsp of oil).  Stir-fry the onion with 1 tsp of salt and 1 tbsp of black soya until soft (fig.2).  Stir in the tomato with 1 tbsp of sugar, mix it well until soft (fig.3).  Stir in the sauce mix and heat through.  Stir in the pork chop and simmer it for 2 minutes with closed lid.  Adjust the taste and thicken the sauce.  Dish it up and serve it in hot.
