食譜: 蠔菇筍片 (Oyster mushroom and bamboo shoot)

1- 罐頭蠔菇1罐  (1 cane of oyster mushroom)

2- 中型洋蔥1個, 去衣切絲 (1 medium onion, sliced)

3- 蔥2條, 去白切段 (2 green onion, stem off, cut into section)

4- 豆卜10粒左右 (10 tofu puff)

5- 蒜蓉2湯匙 (2 tbsp minced garlic)

6- 辣椒粒1湯匙 (1 tbsp of minced hot pepper)

7- 罐頭筍片1罐 (1 cane of slices bamboo shoot)

8- 芽菜約200g, 去尾, 洗淨 (200g bean sprouts, stem off)

汁料 Sauce mix
份量自供參考 (just for reference only)

1- 蠔油3湯匙 (3 tbsp of oyster sauce)

 水3湯匙 (3 tbsp of water)

 麻油1茶匙 (1 tsp of sesame oil)

4- 鹽1/3茶匙 (1/3 tsp of salt)

5- 糖1/3茶匙 (1/3 tsp of sugar)

做法 Steps

1- 
先將蠔菇, 豆卜, 筍片和芽菜出水 (圖1), 豆卜要壓一壓去油, 芽菜則要到最後30秒才加, 以免過熟, 盛起材料隔水備用

2- 
快火落油(約1湯匙)起鑊, 先爆香蒜蓉, 蔥和辣椒, 再放入洋蔥和1/2茶匙鹽炒軟(圖2), 加入蠔菇, 豆卜, 筍片兜勻炒香, 再加入汁料兜勻煮滾 (圖3), 最後加入芽菜兜勻(圖4), 上碟即成

1-  Blanch the oyster mushroom, tofu puff, bamboo shoot, and bean sprouts (fig.1).  Mesh the tofu puff to release the grease.  Bean sprouts add in for 30 second to avoid overcooking it.  Drain them well and put them aside.

2- Heat the pan with some oil over high heat (at least 1 tbsp of oil).  Stir fry the garlic, green onion, and pepper until fragrant.  Stir in the onion with 1 tsp of salt and stir fry it until soft (fig.2).  Stir in oyster mushroom, tofu puff, bamboo shoot, and mix it well.  Stir in the sauce mix and heat through (fig.3).  Stir in the bean sprouts and mix it well(fig.4).  Dish it up and serve it in hot.
