食譜: 松子西芹雞丁 (Stir-fry chicken with celery)

西芹加雞, 可以話係一流嘅配搭, 味道真係好夾呀


加上無皮, 一啲肥油都無, 食落真係覺得好健康呀


唔落松子, 大家可改用腰果呀, 一樣咁好味, 如果要比少朋友吃, 就最好唔落辣椒油, 同埋雞件要切得細粒啲呀, 等佢地易啲入口


一個快靚正, 健康又無難度嘅菜色, 大家真係唔怕煮多幾次呀


正所謂: 松子西芹炒雞丁, 好味健康又有益

烹調時間: 40分鐘左右

材料
Ingredients:
1- 無骨無皮雞上脾6隻, 切件 (6 boneless, skiness, chicken leg, cut into pieces)
2- 蒜蓉1湯匙 (1 tbsp chopped garlic)
3- 洋蔥, 去衣切絲 (1 onion, sliced)
4- 西芹1棵, 切皮, 切粒, (1 celery, peeled, diced)
5- 松子適量 (some pine nut)

汁料 Sauce:
1- 辣椒油適量 (some chili oil)
2- 生抽2-3湯匙 (2-3 tbsp soya sauce)

做法
Methods:

1- 雞肉用基本野醃20分鐘, 松子用少許油, 中慢火爆至金黃(圖1)備用, 西芹放入熱水出水3-4分鐘(圖2), 隔水備用
 


2- 快火落油起鑊, 先把爆香蒜蓉, 快火炒熟雞肉, 備用 (圖3)


3- 快火落油起鑊, 用少許鹽爆香洋蔥至軟身, 加回雞肉, 西芹, 加少去辣椒油和2-3湯匙生抽兜勻(圖4), 上碟灑上松子即成


1- Marinade the chicken with usual spices for 20 mins.  Fry the pine nut with some oil under medium heat until brown (Fig1).  Put it aside.  Celery boils in hot water for 3-4 mins (Fig2).  Drain it well and put it aside


2- Heat the pan with oil in high heat.  Stir-fry the garlic until brown.  Stir-fry the chicken until done.  Put it on the aside(Fig3).  


3- Heat the pan with oil in high heat.  Stir-fry onion with some salt until soft.  Add the chicken, celery along with the sauce (fig4).  Mix them well.  Put all on the dish and spread the pine nut on the top of the chicken.

貼士:

1- 西芹記得要去皮, 過水, 回鑊則不需煮太耐


2- 松子好易燶, 一見轉色就好熄火了
