CH: 栗子薯仔炆排骨 (Chestnut, potato with spare ribs)

雪櫃有好多淨低嘅材料, 又係時候清一清

栗子擺左成4個月, 我諗再唔食就會爛啦, 又快啲清理左先


而薯仔, 貪平買左一大袋, 再唔食就會出芽, 就唔要得啦, 又係要快啲清理

排骨, 上次焗完喼汁骨同燒烤骨淨低, 都係要快啲清埋佢


就係咁, 三個唔相識嘅材料就咁走埋係一個煲, 一鑊熟呀, 哈哈


不過真係好甜, 薯仔先生炆完個汁已經好甜, 加埋栗子小姐, 真係甜上甜, 加埋排骨仔仔, 味道真係好夾呀


正所謂: 栗子薯仔炆排骨, 天然鮮味好難得


真係好好味呀

烹調時間: 50分鐘左右

材料
Ingredients:
1- 栗子8粒左右 (8 chestnuts)
2- 蒜蓉1湯匙 (1 tbsp chopped garlic)
3- 薯仔4-6個, 去皮, 切件 (4-6 potatos, peeled, diced)
4- 青蔥1條, 切粒 (1 green onion, diced)

汁料
 Sauce:
1- 生抽1湯匙 (3 tbsp soya sauce)
2- 水適量 (water)
3- 鹽適量 (a bit of salt)

做法
Methods:

1- 排骨用基本野醃10分鐘, 栗子煲10分鐘, 趁熱去殼, 去衣(圖1)
2- 快火落油起鑊, 炒香薯仔至金黃(圖3), 放入煲內, 加水至蓋過薯仔, 中火炆10分鐘
3- 快火落油起鑊, 炒香蒜蓉, 加入排骨炒熟(圖2), 連同栗子加入煲內, 添水至材料3/4身位(圖4), 中火續炆20分鐘, 加生抽和鹽調味, 灑上蔥花即可

1- Marinade the spare ribs with usual spices for 10 min.  Boil the chestnuts for 10 mins.  Peel the shell off while it is still warm (Fig1)
2- Heat the pan with oil in high heat.  Stir-fry the potato until brown (Fig3).  Put the potato into the pot cover with the water.  Cook it through in medium heat for 10 min.
3- Heat the pan with oil in high heat.  Stir-fry garlic until brown.  Add and stir-fry the spare ribs until done.  Put the ribs and chestnuts into the pot.  Add water until it is covered 3/4 of the ingredients.  Cook it through another 20 min in medium heat.  Add the soya sauces and salt to taste.  Add the green onion to decorate.

:

1- 栗子還熱時, 很容易就把殼和衣去掉
2- 薯仔炒過, 炆時就不易溶掉
3- 排骨如果有骨, 可以先出水, 再用蒜蓉, 生抽炒香, 不用醃
4- 各人爐頭火力不同, 要自己調整 (不要太猛火)
