Stir fry is always refer to stirring the ingredient for about 2-5 minutes.  It is not necessary to stirring too fast or too many times.  The goal is to cook the ingredient without burning it
Mix it well is referring to stirring the ingredients quickly for only 1-2 minutes.  The goal is to mix the sauce mix or other ingredients more evenly
