食譜: 香辣菠蘿蝦 (Shrimps with pineapple in spicy and sour sauce)

話咁快又星期五啦, 今日雖然轉凍, 不過太陽哥哥無sick leave 呀, 所以天氣真係唔算差呀, 唔知點解呢, 自從日光時間一轉,

有些blog友問我, 點樣煮啲蝦先會爽, 其實首要條件當然係啲蝦係靚先得, 唔一定要游水蝦先叫靚嘅, 游水蝦好貴呀(我哩邊),

急凍蝦都可以有靚蝦, 不過就要靠自己試啦, 唔係隻隻牌子都好食呀, 講真, 我都試過唔少,

不過通常啲蝦來自泰國的話都唔差得係邊


之後啦, 只要用少少鹽醃吓, 煮完就會自然爽啦, 其實我之前啲蝦食譜應該都有講, 但我知大家未必睇返, 或者唔記得啦, 所以講多次啦


你見我有落橙椒, 但食譜無寫, 無錯, 因為我淨低半個橙椒, 所以買落埋囉, 大家喜歡可以用三色椒都可以呀,

材料 Ingredients

1- 中蝦20隻左右, 去殼, 清理好 (20 shrimps, shell removed, cleaned)

2- 中洋蔥1個左右, 去衣, 切絲 ( 1 medium onion, peeled, sliced)

3- 青蔥1條, 去尾, 切絲 (1 green onions, stem off, sliced)

4- 蒜蓉1湯匙 ( 1 tbsp of minced garlic)

5- 細紅辣椒, 切粒 (1 small red pepper, diced)

6- 青椒1隻, 切絲 (1 green pepper, sliced)

7- 熟腰果1/2杯 (1/2 cup of baked cashew)

8- 罐頭菠蘿
8片, 切粒 (8 sliced caned pineapple, diced)

汁料 Sauce
份量只供參考 (just for reference only)

1- 茄汁2湯匙 (2 tbsp of ketchup)

2- 罐頭菠蘿汁2湯匙 (2 tbsp of pineapple juice from the cane)

3- 辣椒醬1/2 (1/2 tsp of chili sauce)
 
做法 Steps

1- 先將蝦用鹽, 胡椒粉, 生粉各1茶匙醃10分鐘, 快火落油(約1湯匙)起鑊, 將蝦炒熟盛起隔油備用

2- 快火落油(約1湯匙)起鑊, 先爆香辣椒, 青蔥及蒜頭至金黃, 再落洋蔥和約1/2茶匙炒至軟身(圖2), 再加入青椒和汁料炒勻(圖3), 再加入菠蘿, 腰果蝦炒勻 (圖4), 上碟即成

1- Marinade the shrimps with salt, pepper and corn starch (1 tsp of each) for 10 minutes.  Heat the pan with 1 tbsp of oil over high heat.  Fry the shrimps until done.  Put it aside and drain it well.

2- Heat the pan with 1 tbsp cup of oil over high heat.  Stir-fry the hot pepper, green onion and garlic until fragrant.  Stir in the onion with 1/2 tsp of salt until soft (fig.2).  Stir in pepper and sauce mix, and mix it well (fig.3).  Stir in the pineapple, cashew and shrimps, and mix it well (fig.4).  Dish it up and serve it in hot.
