食譜: 黃金芙蓉蛋 (Scramble egg with prosciutto)


上次咪話我去日本食品貨倉買o野嘅, 我買左啲綠茶粉, 諗著可以用嚟沖茶同埋整甜品嘛, 我囉左啲返公司呀,

昨日沖左杯, 加埋我用咖啡機發啲奶落去, 好味道呀, 好似綠茶奶式呀, 哈哈

今日哩個餸都幾fusion, 因為我用西式炒蛋做哩個中菜, 大家應該有食過芙蓉蛋啦, 傳統會用金華火腿同埋蛋白, 唔用蛋黃嘅


我就諗, 用咁多蛋白,

咁蛋黃咪無用? 用金華火腿, 咪好貴囉, 係外國地方又唔係成日有得買呀, 於是我就自創, 整左哩個黃金芙蓉蛋

西蘭花圍碟真係好靚, 但你無的話, 唔用都無所謂啦, 我用意大利煙燻火腿去代替金華火腿, 你無的話, 可以用普通火腿或者煙肉都無問題, 一樣咁惹味

至於個炒蛋, 記得唔好炒得太熟, 炒到仲係濕濕地已經得, 我會建議你落左蛋漿後, 一見佢開始熱, 有煙, 就立即熄火, 不斷兜佢就得, 咁樣容易控制好多


當然啦, 加奶一定會滑啲, 但你唔喜歡的話, 可以加啲雞湯同水去代替, 都可以嘅,

材料 Ingredients

1- 意大利煙燻火腿6塊左右, 切粒 (6 pieces of prosciutto ham, diced)

2- 中洋蔥1個, 去衣, 切粒 (1 medium onion, diced)

3- 瑤柱4粒, 浸軟, 撕碎 ( 4 dried scallops, soaked, shredded)

4- 奶4湯匙 ( 4 tbsp milk)

5- 雞蛋6隻, 發勻 ( 6 eggs, blended)

6- 西蘭花1個 (1 broccoli )



做法 Steps

1- 先將西蘭花切成粒, 出水(約3分鐘), 隔水, 排碟, 花圍成圈, 其他則放於碟中(圖1), 奶和蛋漿攪勻

2- 快火落油(約1湯匙)起鑊, 先加洋蔥和1茶匙鹽炒至軟身, 再加入瑤柱炒至乾身(圖2), 加入火腿粒炒香(圖3), 到入蛋漿兜勻(圖4), 熄火炒成碎粒, 加少許鹽兜勻, 到7成熟左右上碟, 放於碟中即可

1- Dice the broccoli.  Blanch the broccoli for 3 minutes.  Drain it well and dish it up as per fig.1.  Mix well the egg and milk.

2- Heat the pan with some oil over high heat (at least 1 tbsp of oil).  Stir fry the onion with 1 tsp of salt until soft.  Stir in scallops and stir fry it until dry (fig.2).  Stir in the ham and stir fry it until fragrant.(fig.3).  Stir in egg mixture and mix it well (fig.4).  Turn the heat off and stir egg until fully scrambled and not dried out.  Stir in some salt to taste.  Pour into middle of the dish and serve it in hot.

1- 奶可以改用1湯匙雞湯和3湯匙水代替
