食譜: 中式雞柳 (Fry chicken in sweet and sour sauce)

好忙呀, 成朝早雖然無咩做過乜, 但不知不覺都去到12點啦, 咁都好, 好過坐係到渡日如年咁呀

日日睇天氣都話開始落雪啦, 我已經做好晒準備, 換左凍天呔啦, 我哩邊一到12月中,

邊個無凍天呔就要食告票, 所以都係早啲換好啦

今日哩個餸改自中式牛柳, 用雞肉比用牛肉仲易煮啦, 不過都要小心, 因為雞肉無骨其實好快就熟, 熟過頭就會無汁, 變得好鞋口啦


所以一開始煎雞肉時, 唔好立即煎到全熟, 煮到佢8-9成熟咁上下, 就好盛起, 之後回鑊再煮一陣,

個汁記得唔好煮咁耐, 因為酸味好唔耐熱,

1- 雞柳1磅左右, 切件 (1 lbs of boneless chicken, cut into pieces)

2- 中型洋蔥1個, 去衣切絲 (1 medium onion, peeled, shredded)

3- 蒜蓉2茶匙 (2 tsp chopped garlic)



汁料 Sauce
份量只供參考 (just for reference only)

1- 茄汁4湯匙 (4 tbsp of ketchup)

2- 喼汁2湯匙 (2 tbsp of L&P Worcestershire sauce)

3- 鹽1/3茶匙 (1/3 tsp of salt)

4- 糖2糖匙 (2 tbsp of sugar)

5- 水 4湯匙 (4 tbsp of water)

6- 生抽2茶匙 (2 tsp of soya)

7- HP汁2茶匙 (2 tsp of HP sauce)




做法 Steps

1- 先將雞柳用基本野醃20分鐘,
快火落油(約1湯匙)起鑊, 將雞件煎至兩面金黃, 約8成熟, 盛起備用

2- 快火落油(約1湯匙)起鑊, 先爆香蒜蓉, 再加入洋蔥和1茶匙鹽炒至軟身 (圖1), 再加
雞柳連同汁料兜勻煮滾(圖2),  上碟即成

1- Marinade the chicken with basic seasoning for 20 minutes.  Heat the pan with 1 tbsp of oil over high heat.  Fry the chicken until both sides turn brown, about 80% done.  Put it aside.

2- Heat the pan with some oil over high heat (at least 1 tbsp of oil).  Stir fry the garlic until fragrant.  Stir-fry the onion with 1 tsp of salt until soft (fig.1).  Stir in the chicken and the sauce mix, and heat it through (fig.2).  Dish it up and serve it in hot.


貼士 Tips
1- 汁料唔好煮太耐, 否則會越煮越甜而沒有酸味
